Shrimp "Fried Rice"

I don't even know what to tell you guys. In my last post I blabbered on about how much I love rice so how surprised can you actually be that I've gone on to make yet another "rice" dish? This blog may end up just being different ways to use cauliflower for rice based dishes so hopefully you're as ecstatic about it as I am! I used shrimp but you can definitely sub it out for any other protein that you would prefer. If you are going to use shrimp, here are a couple of tips: Either fresh or frozen shrimp will work fine for this recipe. If you're going to use frozen shrimp, make sure that it is thawed out completely and drained. Shrimp cooks rather quickly so thawing them all the way through will help to ensure that some won't become overcooked. Be sure that your shrimp are deveined prior to cooking. Cooked shrimp will be nice and bright colored red, especially the tail. Another way to tell if your shrimp are fully cooked is to look at its shape. Uncook...

Spanish Cauliflower Rice

Y'all, can we just take a moment to talk about how delicious rice is? You've got fried rice, sticky rice, risotto, pilaf, long grain, and short grain rice.The list can go on and on, and all of it is just so dang tasty! So how do I satisfy my deepest cravings for rice dishes while trying to stick to a meal plan? CAULIFLOWER! I'm sure you've all seen how versatile cauliflower can be as of late. You can mash it in place of potatoes or even use a riced cauliflower mixture to make a low carbohydrate pizza crust. But one thing I've learned over the past few weeks is that there are no limits to what you can do with these wonderful florets. Day 26 - This is my why...

I'm on day 26 of my new nutrition program. 26 days without alcohol. 26 days saying no to all of the pizza that I still crave. 26 days of saying enough is enough and it's time to get your $#!t together, girl! I've been an athlete all my life. I played competitive soccer most of my youth and carried on until I got hurt in college and couldn't play anymore. Up until that point, I worked out so much that I could eat anything without thought or consequences. Yay youthful metabolisms! As I was transitioning from collegiate athlete to weekend warrior, my bad eating habits came along for the ride. Fast forward to my mid-twenties and the habits got worse. Alcohol became a clutch after a big life altering event. It was the therapy that I thought I needed when no one or no one thing could help me cope. Spaghetti Squash with Turkey Cauliflower Meatballs

It has finally cooled down to a balmy 98 degrees here in Phoenix so you know what that means! "Fall" is here and its squash season. Acorn. Butternut. Calabaza. The ever popular pumpkin. But today we're talking spaghetti. Now, I am a carbaholic and one of my favorite sources is pasta. Soft noodles drenched in a creamy sauce, loaded with cheese. Throw in a side of garlic bread and I am putty in your hands! But I'm on a meal plan now and still want to enjoy some of those things minus the guilty. With each meal, my goal is to get in 1 serving of a lean protein (4-7oz depending on the meat or other protein source) and 3 servings of a low carbohydrate vegetable. Welcome to Fueled for Adventure! I am kicking off week four of a new nutrition plan and it's been such a fun journey so far. Every week I'll share with you some of my favorite recipes, workouts, and my progress as I reclaim my health. I'm also excited to show you how to stay the course with your meals plans even when you're on the run. Some times it's tough to stick to a plan when you're just living life. But it can be done! Whether you're out at a restaurant with not many options or if you're on the road and don't have access to a kitchen, I'll give you all the tips and tricks you need to be successful. And heck! I may even take you all along for the ride as I explore some of my favorite camping and hiking spots throughout Arizona. Trust me, you'll want to stay tuned for all the fun.
