Shrimp "Fried Rice"
I don't even know what to tell you guys. In my last post I blabbered on about how much I love rice so how surprised can you actually be that I've gone on to make yet another "rice" dish? This blog may end up just being different ways to use cauliflower for rice based dishes so hopefully you're as ecstatic about it as I am!
I used shrimp but you can definitely sub it out for any other protein that you would prefer. If you are going to use shrimp, here are a couple of tips:
1 serving: 1 lean | 3 green | 0.5 condiment | 1 healthy fat
2 cloves garlic
1/2 cup onions; chopped
24 ounces of shrimp
1 cup bell peppers (any color); chopped
4 cups cauliflower; riced
2 tbsp soy sauce
1/2 cup water
1 cup white mushrooms; chopped
2 eggs; wisked
1/4 green onion (optional)
2. Cook shrimp for 4-5 minutes or until cooked all the way through. Remove shrimp (leaving the garlic and onion behind) from pan and set aside.
3. Using the same pan, add bell peppers, cauliflower, soy sauce, water and mushrooms. Cook for about 15min or until liquid has evaporated and cauliflower is tender.
4. Make a well in the middle of the pan, scramble eggs and then incorporate into the rice once it is cooked.
5. Top portioned rice with shrimp and green onion.

- Either fresh or frozen shrimp will work fine for this recipe. If you're going to use frozen shrimp, make sure that it is thawed out completely and drained. Shrimp cooks rather quickly so thawing them all the way through will help to ensure that some won't become overcooked.
- Be sure that your shrimp are deveined prior to cooking.
- Cooked shrimp will be nice and bright colored red, especially the tail. Another way to tell if your shrimp are fully cooked is to look at its shape. Uncooked shrimp will be shaped like a "U", overcooked shrimp will begin to tighten up into an "O" shape, while perfectly cooked shrimp will take on a soft "C" shape.
- Shrimp has a very mild flavor, anything that you use in the pan while you cook the shrimp will come through in the finished product. So use garlic is you're as big a fan as I am! Mmm!

1. Over medium heat, warm up oil in large pan. Add garlic and onion, cook until fragrant.2. Cook shrimp for 4-5 minutes or until cooked all the way through. Remove shrimp (leaving the garlic and onion behind) from pan and set aside.
